This is the creamiest, peanuty vegan satay recipe you’ll find. The satay sauce is thick, rich and super satisfying. It’s one of my favourites.

Ingredients:
- Tofu (firm or press for 15 minutes)
- Onion
- 2 peppers
- Mushrooms
- Garlic
- 3 tablespoons of hoisin sauce, peanut butter, and soy sauce
- Cornflour
- Sesame oil
- Sesame seeds to serve
Method:
- Chop tofu into squares. Drizzle with soy sauce and olive oil and roll each piece in cornflour.
- Place tofu on a baking tray and into a pre-heated oven for 15-20 minutes.
- Heat sesame oil in a pan and cook vegetables and garlic until soft.
- Gently stir in peanut butter, hoisin sauce and soy sauce.
- Add a little water if necessary.
- Simmer for a few minutes then add the cooked tofu.
- Serve with rice and sprinkle with sesame seeds.
